Oaxaca is known as the land of seven mole’s. There is the black, red, green, yellow, but what are the other three? We will learn about the ingredients and better yet, make a pot 'o mole with the finest Oaxaca chefs and cooks. Explore the food markets, prepare and enjoy a variety of regional specialties, including: tlayudas, tamales, quesadillas with squash blossoms, stuffed peppers, cactus salad, fresh juices...and maybe even grasshoppers!

Sometimes it is hard to imagine that so close to us, are a people who's rhythms of life are so different from ours. From what they think about and do when they get up in the morning, how they build their homes, what they eat, and even where they sleep. In large part, the Maya people of Yucatan have preserved a way of life, that for centuries has revolved around the cycle of the seasons and the all important corn harvest, or "milpa", based on slash and burn methods. Their cultural identity also comes from their unique Language and Religion. Join us on a journey to understand more about how others in our world live today.
